Potato cakes
The potato cakes are made from a mixture of boiled potatoes, spelt flour, almonds and eggs. They taste similar to Kaiserschmarrn and are served warm with icing sugar. An ideal use for leftover jacket potatoes.
Method:
- Grate the cooked potatoes on a grater and place in a large bowl.
- Add the eggs and grated almonds.
- Mix the flour with the baking powder and stir into the potato and egg mixture.
- Leave to soak a little.
- Meanwhile, melt the clarified butter in a pan.
- Scoop out portions of the potato cake batter with a tablespoon and fry them in the clarified butter on all sides.
- Serve dusted with icing sugar.
Tip: The egg whites can also be beaten until stiff beforehand and then folded into the mixture last. Any kind of compote is suitable as a garnish.
