Green Pancakes
These "green pancakes" are potato pancakes with lots of fresh, green herbs. Whether chives, parsley, goutweed or nettle, the flavours vary, but are always delicious and crispy.
Method:
- Wash, peel and grate the potatoes on a grater.
- Place in a sieve and strain off the excess moisture.
- Add a little milk, salt, eggs and spelt flour to the potatoes.
- Finely chop the chives or other herbs and add to the potato mixture.
- Stir the mixture well.
- Meanwhile, melt the clarified butter in a pan and gradually fry the green pancakes on both sides until golden brown.
- They taste very good on their own, but also with a green salad.
