Nettle Soup
This nettle soup is a small, fine starter soup. The stinging nettle, lat. Urtica dioica, is rich in iron and chlorophyll and therefore has a particularly blood-forming effect. Internally, it is used for mucus in the chest and lungs, skin rashes and inflammation of the urinary tract.
Method:
- Wash the nettles and pat dry.
- Cut the onions into fine cubes.
- Heat the oil in a soup pot, sauté the onions until translucent, sprinkle with a little spelt flour and pour in the vegetable stock.
- Add the nettle leaves to the stock after removing the stalks.
- Add the cooked, diced potatoes and bring everything to the boil briefly.
- If desired, refine with a little cream and season with herb salt and pepper.
