Dalges

The Leib family from Fellingshausen loved to cook Dalges in the oven. It is a hearty oven dish made from potatoes, onions, Mettwurst sausage, black pudding, bacon and prunes.
Ludwig Leib (1873-1949) was a miner and bricklayer by birth and must have been delighted to receive such a meal from his wife Karoline (1872-1968), who worked in the cigar factory.

Method:

1 Grate the onions and potatoes on a kitchen grater.
2. place in a sieve and leave to drain.
3. mix with eggs and a little flour.
4 Season with salt and pepper
5 Cut the dried meat into strips.
6. cut the mettwurst and black pudding into pieces.
7. fold the sausage pieces and prunes into the potato mixture.
8 Coat a deep dish or roasting tin with the lard or other fat.
9. pour in the potato mixture and bake in the oven, first for an hour at 140°C and then for half an hour at 180°C top and bottom heat.
